Lentil Walnut Pate

If you have never had this before, I encourage you to make this recipe as soon as you find it. It is super easy to make and so amazing! When we have served this dish at parties, people have said “If we can make something this delicious, why would we ever eat meat”?

Ingredients

· 1 cup of raw walnuts

· 1.5 cups cooked lentils

· 1 tablespoon gluten-free tamarai, soy sauce, or Liquid Aminos

· 2 to 3 tablespoons of fresh lemon juice or rice wine vinegar.

· ½ teaspoon dried tarragon

· ½ teaspoon dried thyme

· ½ teaspoon dried parsley

· 1 teaspoon onion powder

· ¼ teaspoon sea salt (to taste)

· optional: tiny pinch of cayenne powder

· 1 to 2 tablespoons of water (to thin to desired texture)

Instructions

1. Cook lentils ahead and cool to room temperature.

2. In a food processor: grind walnuts until finely ground.

3. Add cooked lentils, tamari, lemon juice or vinegar, tarragon, thyme, parsley and onion powder. Process until smooth.

4. Scrape down sides of the food processor bowl and process again until smooth

5. Add walnut oil (if using) and water as needed (add water if mixture is stiff)

6. Serve with celery, carrots, lettuce, collards, crackers, etc.

7. It is so easy…and delicious! Enjoy!

Optional: Replace walnuts with equal amount of raw Pecans or Macadamia Nuts.
