Gluten Free Cookies

We have been enjoying these cookies for years. They are super delish. My husband and son request these regularly! So easy to make. I make them in a single bowl. Makes 18 cookies.

Ingredients

· 2.5 cups of almond flour

· ¼ teaspoon sea salt

· ½ teaspoon baking soda

· ½ cup vegetable avocado oil

· ½ cup maple syrup

· 1 teaspoon pure vanilla extract

· 1 cup chocolate chips (I usually use dairy-free chips like Lili’s and Bake Believe)

· ½ cup pecans or walnuts chopped (optional)

· ½ cup raisins (optional)

Instructions

1. Preheat oven to 365 degrees F.

2. Mix all dry ingredients together thoroughly. Either mix in the chocolate chips or make a version with pecans and raisins (they are every bit as delicious as the choc. Chips : )

3. Add all the wet ingredients. Mix until well incorporated.

4. Form 18 cookies and place on a parchment or silicone mat lined cookie sheet.

5. Place sheet pan on the center rack of preheated oven.

6. Bake 16 to 18 minutes (the full 18 minutes for a crispy cookie)

7. Check at 15 minutes as ovens vary
