Fresh Spring Rolls With Spicy Almond Sauce

These are one of our family’s favorite meals. Please know that you can add any of your favorite veggies to this recipe. Everything that we have ever put in there has been delicious! Enjoy!

Ingredients

Spring Rolls:

· 2 ounces thin rice noodles (for example vermicelli) or 1 cup basmati rice

· 1 cup lettuce, torn

· 1 cup red cabbage, thinly sliced

· ½ cup carrot, julienned

· ½ English cucumber (1 small cucumber)

· 1 medium jalapeno, seeds and ribs removed, diced

· 1/3 cup green onions, thinly sliced

· 1/3 cup fresh cilantro or Thai basil, chopped

· 2 teaspoons toasted sesame oil

· ¼ teaspoon sea salt

· 8 sheets rice paper, spring roll wrappers

Spicy Almond Sauce:

· 2/3 cup creamy almond butter (other nut butter that you love)

· 2 tablespoons gluten-free tamari or soy sauce, or coconut aminos

· 2 tablespoons fresh lime juice or rice vinegar

· 1 tablespoon siracha (change amount to taste)

· 2 teaspoons sesame oil

· ¼ teaspoon sea salt

· Optional: hot filtered water, as needed to thin

· Optional: 1 to 2 tablespoons honey or other sweetner

Instructions

1. Cook rice noodles or basmati rice according to package instructions.

2. Have everything ready, vegetables chopped, sauce made before starting rice wraps.

3. Fill pie dish or shallow pan with an inch of cool water. Place 1 rice paper wrap in the water at a time. Soak until pliable approx. 20 seconds (follow package instructions). Be ready to use the softened rice wrap right away. Place softened rice wrap on fresh tea towel (the rice wraps are less likely to stick to a towel versus a plate).

4. Place chopped vegetables on softened rice wrap. Leave approx. 1 inch of open rice paper around the edges. Place lettuce on wrap, followed by noodles or rice, cabbage, carrot, cucumber, jalapeno, green onions, and cilantro. Really you can add any of your favorites here (as long as they fit) Roll the rice wrap up like a burrito. Place seam-side down. Repeat with remaining rice wraps.

5. To make the almond dipping sauce: Place all Spicy Almond Sauce ingredients in a bowl whisk to combine.

6. Place on a serving dish. Cover with a damp tea towel to keep fresh until ready to eat.

7. Serve whole or cut in half with the Spicy Almond Sauce.
