Daily French Salad

This is the salad that shows up at our family gatherings most often. It is super easy, super flexible and super delicious and has been in our family for generations. It was many years into life before I realized that other salad dressings existed. This salad tastes fresh and delicious every time. Enjoy!

Total Time: 15 minutes

Dressing Ingredients

2 Tablespoon finely sliced shallots

2 Tablespoons red wine vinegar

1/4thteaspoon sea salt

1 teaspoon Dijon mustard

4 to 6 tablespoons extra-virgin olive oil

Salad Ingredients

1 large head of Butter, Bibb or Red leaf lettuce (2 small heads)

Instructions

1. In a large bowl, whisk together vinegar and sea salt. Stir in shallots. Let this mixture marinate for 10 minutes.

2. Whisk in Dijon mustard. Slowly, pour in the olive oil in a thin steady stream, while whisking constantly to emulsify the dressing.

You can add anything you love into this salad. It is super flexible. Here are some things we sometimes add in.

· Fresh Ripe Tomatoes

· Nuts

· Seeds

· Beans

· Sprouts

· Olives

· Avocado

· Ingredients you love. Have fun!

Dressing can be stored in the refrigerator for up to 1 week, in air=tight container.
