My husband and our son request this Split Pea Soup over and again.
This easy soup makes a smoky hearty bowl of Love. Perfect for a soup and salad dinner!
Ingredients:
· 2 Tablespoons of water (have a cup on hand to add as needed)
· 2 medium onions, diced
· 3 medium stalks of celery, diced
· 3 medium carrots, diced
· 3 cloves of garlic, crushed in garlic press
· 2 teaspoons of ground cumin
· 7 cups of water
· 2 cups of split peas (dry, uncooked)
· 2 teaspoons of rice or red wine vinegar
· 2-3 teaspoons of sea salt
· 1 teaspoon liquid smoke
· Pepper to taste
Instructions:
1. In a large heavy pot add olive oil and turn to medium heat
2. When the oil is shimmering, add the onions and sauté – if onions stick to pot, add a small amount of water. After a minute add carrots and celery and sauté on medium low with onions for approximately 10 minutes.
3. Stir in the water and split peas bring to boil
4. Lower heat and simmer soup for an hour and 15 minutes (add water to thin soup if needed – I usually don’t add water)
5. When the split peas are soft – remove from heat
6. Add the vinegar and liquid smoke – stir
7. Add salt and pepper to taste
8. Serve and Enjoy!
